I just converted my new HTC One over to the Google Play edition using your tutorial and I've lost my wifi calling ability! I'm fine with it, but was really excited about this feature as my house seems to have poor reception...
Thoughts on how to overcome this?

Unfortunately, it was a feature of the Sense ROM and is not supported on stock Android.
The Wifi calling was a feature of the T-mobile rom and 4.3 just dropped last week.
You now have the lastest 4.3 and wifi calling. Changing you CUIID back to CID-T-MOB010 or CID-11111111 should allow for you to install this np or maybe the RUU will work without you changing anything...not sure :/
